Buffalo Ground Turkey Zucchini Boats

Not only do I LOVE food, but I love getting creative with it. So the first recipe I wanted to share is ‘Buffalo Ground Turkey Zuchini Boats’.
First the ingredients…(serves about 3 people depending on how hungry you are)
3 zucchinis
½ cup of Buffalo sauce
1 lb of ground turkey (or chicken)
Salt & pepper for flavor
And now let’s begin…
To begin, you can preheat the oven to 400 degrees Fahrenheit and spray a 9x13 pan with nonstick cooking spray
Start by first putting the ground turkey in a skillet and grilling it until it is all fully cooked, it will be a light brown/tan color…make sure there is no PINK!!! During this step you can add salt and pepper as you please.
Next, while the turkey is cooking you can begin to cut the zucchini. First, cut it in half the ‘hot dog’ way (not the hamburger way) and then you can begin to scoop the middle out leaving ¼ inch or so of zucchini for the boat.
After the ground turkey is all cooked, while it is still in the skillet, add the buffalo sauce and mix it altogether.
You can then place the zucchini boats in a pan side by side and fill the boats with the buffalo ground turkey. After finishing this step you can place a sheet of aluminum foil around the pan and place it in the oven for 35 minutes.
